Anotha week, anotha meal prep!
I've made this before but didn't blog about it so did it really even happen!?!
The first time around I added a few more veggies (peppers, onions, etc) but I was slack a lackin on ingredients so I worked with what I had.
Spicy Salmon Bowl:
- Salmon Filets
- Minced Garlic
- Jasmine Rice (or whichever kind you prefer)
- Edamame
- Spicy Sauce
For the Sauce:
- Sriracha
- Soy Sauce
- Hoisin
This is one of the easiest recipes ever. First, I seasoned the salmon with the minced garlic, himalayan salt, and the 21 season salute (from Trader Joes OF COURSE), then poured the spicy sauce over the filets and let them marinade for ~30 min. While the filets were getting their marinade on, I made the rice and the edamame. I cooked the salmon at 400 degree for 15 min then layered the rice and edamame in my meal prep containers with the salmon on top.
Super easy. Super delicious.
What are you eating for lunch this week!?!
Here's an embarrassing video of me after making these bowls. I was really excited with the turn out.
